Why cooked tomatoes have an advantage In raw red tomatoes, lycopene is stored in tightly packed crystals behind plant cell walls. Cooking and processing help release it, making tomato sauce, paste, and soup useful sources. Heat can also change lycopene’s shape into forms that are easier to absorb. And because lycopene is fat-soluble, what you eat alongside it matters. Pairing tomatoes with a little olive oil helps your body absorb the pigment.
