The process starts with dry bambara nuts that are cleaned and then ground into a fine flour. Once the flour is ready, palm oil is added first before any other liquid. That step is important because the palm oil gives Okpa its deep orange color and rich taste. After the oil, water is added little by little while stirring to avoid lumps. As the mixture thickens, pepper, onions, salt and seasoning are mixed in to bring out the flavor. The batter is stirred until it becomes smooth and thick, almost like a pudding base, and that is what makes the texture come out right after cooking. After the batter is ready, it is shared into small containers or wrapped in leaves. Many people use small plastic bowls, foil plates, or banana leaves because they hold the shape well during boiling. The filled containers are arranged neatly inside a big pot, and enough water is poured to cover the base without spilling into the Okpa itself. The pot is then covered tightly so the heat and steam can cook everything evenly. It usually takes about an hour to an hour and a half on medium heat for the Okpa to set properly. While it is cooking, the palm oil blends with the bambara flour and the spices, and that is what gives Okpa its unique taste and firm texture. When the cooking time is done, the pot is opened and the Okpa is allowed to cool for a few minutes before serving. A good Okpa should be solid, smooth inside, and bright orange from the palm oil.
