Gin Gin Fizz 2 oz London Dry Gin 1/2 oz Simple Syrup 3/4 oz Lemon Juice 1 egg white 4 oz Ginger Beer Combine gin, simple syrup, lemon juice and egg white in a shaker with no ice. Shake for 10 to 15 seconds. Open shaker and add ice and shake again until chilled. Double strain into a highball with no ice. Carefully pour ginger beer in to the glass until head reaches just beyond the top of the glass. Peach Gin Spritz 1 1/2 oz Gin 1 oz Peach Syrup 1/2 oz Lemon Juice 1-2 Dashes Peach Bitters 4 oz Sparkling Wine Fill a Collins glass or large wine glass with ice. In a shaker, add all ingredients except the sparkling wine with ice. Shake briefly to chill.
