Opening Day Fizz...le 1 oz Dark rum 1 oz Light rum 3/4 oz Lime juice 1 oz Simple Syrup 1 egg white Club Soda Combine rums, lime juice, simple syrup and egg white in a shaker without ice. Shake for 10 seconds. Open shaker and add ice. Shake again until chilled. Strain into a chilled collis glass. Top with club soda. Opening Day Black Eye 1 oz Bourbon 1 oz Rye 1/2 oz Orange Curacao 1/3 oz Rich Demerara Syrup 1 oz Lemon Juice 3 Large Blackberries Muddle the berries and syrup in a shaker. Add remaining ingredients and shake with ice until well chilled. Double strain into a rocks glass with ice. Garnish with a blackberry and/or lemon twist. From Opening Day 2021: Opening Day Gut Punch 1.5 oz Light Rum 1.5 oz Dark Rum .5 oz Lime Oleo Saccharum .5 oz Lime Juice 3 oz Mango Juice Combine rums, oleo saccharum, lime juice in mixing glass with ice, shake, double strain into highball with ice. Top with Mango juice. #doitforwilson
